Irish Coffee
Hot sweet coffee and whiskey, sipped through a cold layer of cream.

Ingredients
- 40 ml1⅓ ozIrish whiskey
- 15 ml½ ozRich demerara syrup (2:1)
- 90 ml3 ozHot coffee
- 30 ml1 ozDouble cream (float)
Makes one drink, about 175 ml before ice.
Method
- Warm the heatproof glass with hot water, then tip it out.
- Pour everything except the cream into the warm heatproof glass.
- Float the cream over the back of a spoon.
- Garnish: lightly whipped cream.
